Camp Cooking: EASY Orange Chicken

Easy camp cooking meal: 30 minute cook time (if veggies and chicken are cut before hand) — Tembo Tusk Skottle Recipe

  • 1lb. chicken (cut into cubes)
  • 2oz vegetable oil
  • 1 packet of Lee Kum Kee Orange Chicken Sauce
  • 1 Onion – chopped
  • 1 Pepper – chopped
  • 1 Broccoli head – chopped
  • 1 bag of microwave
  • 2-3 TBSP of flour
  • Toasted Sesame seed

Heat 2 tablespoons of oil into a pan on medium head. Mix flour with chicken. Cook chicken until browned.

Move cooked chicken to the sides so they stay warm – Add vegetables and 2 TBSP of oil to the middle to cook for 2-3 minutes.

After vegetables are cooked to your liking, turn heat down low, add sauce packet, mix everything together!

Part of the middle of the skottle to cook the rice by adding 2 Tbsp of water, mix and heat for 2 minutes. Then mix it ALL together. Turn heat to medium and simmer for 3 minutes covered. And that’s it! Serve into a bowl and add sesame seeds

Extras: Siracha, kimchee, soy sauce

Tips:

  • Cut the vegetables and chicken before camping!
  • Tembo Tusk Skottle makes it easy to cook everything on a single dish!
  • You can add/substitute any vegetables you like
  • Use Brown Rice as a healthy substitute for white rice
  • The Lee Kum Kee sauce below is the BEST $2 per packet at Seafood City

This was so good (I surprised myself at how good this turned out LOL) especially on a windy/cold day. Easy and simple to make, in total this entire meal cost about $15 ($8 for the chicken, $2 for the sauce packet and $5 worth of veggies). Well worth it and we will definitely be trying this again. We got another sauce packet for Kung Pao Chicken which we will be trying! 🙂
