Low Carb Breakfast Fried Rice with Eggs

One of our favorite breakfast meals! Breakfast Fried Rice using the Tembo Tusk Skottle.

Ingredients

  • 1x can of Spam
  • 1x large carrot
  • 1x large zucchini
  • 1x onion
  • 4-6 Eggs (or 4 eggs and a cup of egg whites)
  • 2 Cups Cauliflower Rice
  • 1 Cup Quinoa and Brown Rice
  • Soy Sauce, Siracha, Minced Garlic

Camp Cooking Tips:

  • Pre-cut veggies and spam before hitting the trail
  • Pre-scramble and season eggs in a shaker cup to avoid breaking eggs on the trail

Instructions:

  1. Start by warming and oiling up (using the Sesame oil) the Tembo Tusk Skottle on Medium heat [You don’t need a Skottle for this but have a large pan available for when you add all ingredients together)
  2. Put the carrots on and cook for 2 minutes
  3. Part the middle, add some oil to the middle and add in the rest of the veggies (Zucchini, onions, etc)
  4. Add the minced garlic and Cook for about 2-3 minutes, tossing frequently (Skottle gets hot so you need to keep food moving)
  5. Part the middle, add more oil, add the Spam and cook for 5 minutes, tossing every minute until the Spam gets browned (This is the BEST way to have Spam = crispy)
  6. Add the Cauliflower and Quinoa Brown rice then pour some Add siracha (to taste) and about 2 TBSP of Soy sauce (Cooking with Cauliflower rice with the Quinoa rice makes the perfect combination, the Quinoa brown rice will soak up the moisture produced by the veggies and cauliflower rice)
  7. Mix the rice well with the Spam and cook for about 2 minutes
  8. Lower the heat on the skottle, part the middle, add oil, then add the eggs – make sure the eggs don’t get mixed into the rice mixture, scramble and keep the eggs moving in the middle until cooked
  9. When the eggs are cooked, add Salt and Pepper to taste
  10. Mix EVERYTHING together now, add more Siracha and another TBSP of soy sauce

Tembo Tusk Skottle Cooking Tips

  • If any food begins to stick, add more oil! Food should never stick on the skottle
  • Keep food moving to avoid burning, the skottle gets hot quickly
  • Using 2 spatulas together makes it easy to move food around on the skottle for proper mixing
